Homemade Apple Fritters

Y’all.. These are what dreams are made of.  To counteract the stress of school, I’ve been baking (so with all my time I should be studying I’m baking, oh well).  I love apple fritters, but the last thing I want to do in the morning is get out of my pajamas and drive to a donut store.  I found this recipe on Pinterest for Baked Apple Fritters and had to try it!  The only change I would make in the recipe is that it was too much Nutmeg even though it was just a 1/4 teaspoon.  I didn’t have a mini muffin pan, so I made 12 regular muffins and it turned out just fine!

Baked Apple Fritters

Ingredients:

  • 1-1/2 cups Gold Medal® all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/4 teaspoon nutmeg (I would use less)
  • 6 tablespoons cold butter
  • 1 large egg
  • 1/2 teaspoon vanilla
  • 1 (6 ounce) container Yoplait very vanilla yogurt
  • 1 cup chopped apple (about 1 large apple)
  • 1/2 cup shredded apple (about 1 small apple)
  • 2 cups powdered sugar
  • 1/3 cup apple cider

Directions:

1. Preheat oven to 350°F. Lightly spray two mini muffin pans with non-stick cooking spray.

2. In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg. Cut in the butter with a pastry blender or two knives until coarse crumbs form.

3. In a small bowl, whisk together the egg, vanilla and yogurt. Add the yogurt mixture to the flour mixture and stir until well combined. Fold in the apples.

4. Place a few teaspoons of batter in each muffin cup. Bake for 15 minutes until they just start to brown.

5. Remove the fritters from the oven and turn the oven broiler on high. Line two cookie sheets with parchment. Transfer the fritters to the cookie sheets.

6. In a small bowl, whisk together 1 cup powdered sugar and 4 tablespoons apple cider. The glaze should be very thin. Brush the glaze over each fritter and let it drip down the sides. Return the fritters to the oven and broil for 2-4 minutes until the glaze starts to caramelize the tops of each fritter. Rotate the baking sheets every minute to insure even caramelization. Be sure to watch the fritters carefully so they don’t blacken and burn.

7. Remove from the oven. Whisk remaining powdered sugar and apple cider into leftover glaze until it’s smooth and thick. Brush glaze evenly over broiled fritters. Let set on cookie sheets until glaze hardens, about 15 minutes.

Peanut Butter Breakfast Cookies

Since the school year has barely started, I had some time to bake the other day!  I found a recipe on Pinterest for PB2 Breakfast Cookies and decided to try it.  Here is the original recipe (from Watching What I Eat), but I tweaked it a little.  Word of warning: they do kind of have a banana flavor, so if you don’t like bananas, don’t try these!

Ingredients: 

  • 1/3 Cup PB2 Powdered Peanut Butter 
  • 1/3 Cup Water
  • 2 Bananas (mashed until creamy)
  • 2/3 Cup Unsweetened Applesauce
  • 1 tsp Vanilla Extract
  • 2 Tbsp Dark Cocoa Powder
  • Cinnamon (A few shakes) 
  • 2 Tbsp Coconut
  • 2 Cups Quick Oats (Uncooked)
  • 2 Tbsp Dark Chocolate Chips 

Directions: 

  • Preheat oven to 350 degrees
  • Mix PB2 powdered peanut butter (I used half regular and half chocolate) and water. Set aside
  • Combine mashed bananas, applesauce, vanilla, cinnamon and cocoa powder.  Stir throughouly and add the PB2 mixture.  Stir in the remaining ingredients (Oats, Coconut, Dark Chocolate Chips) 
  • Drop cookies onto greased tray (I greased mine with Coconut Oil) and flatten into round cookies (My recipe made 15 cookies)
  • Bake 15-20 minutes
  • Let cool and keep in covered container

NYC Hotspot: Breads Bakery

Taking after my mother, I’m always on the hunt for a new bakery.  After reading Buzzfeed’s 25 Bakeries Around the World You Have to See Before You Die I decided that I needed to try Breads Bakery. Located in Union Square, this bakery is a great spot for breakfast! They had samples of their Chocolate Babka bread, which they are known for and it was amazing- the only downside is they only sell it by the loaf, so I just settled on two little pastries.  I tried their Chocolate Rugelach (that they are also known for) which was to die for, and a Canele (a bundt cake looking pastry) which was also very good.  Definitely recommend this spot if you are in the area!

NYC Hotspot: Van Leeuwen Artisan Ice Cream

When exploring the city last week, my friends and I stumbled across an Ice Cream truck and decided to try it- it was incredible!  Van Leeuwen Artisan Ice Cream has a few stores in New York and an Ice Cream Truck!  The first time I went I got the Salted Caramel and I was in heaven.  I love a good sweet/salty mix, and this was the perfect combination of the two.  I visited their actual store in the East Village a few days later as I was craving my salted caramel ice cream, but this time I got it with hot fudge… To die for!  I highly recommend checking this place out!

New York Hotspot: Sticky’s Finger Joint

Want something unique and delicious? Head over to Sticky’s Finger Joint in Greenwich. With their unique chicken fingers like Caramel Pretzel and  Buffalo Balsamic Maple, this one of a kind place is a must try.  I got their ‘Bada Bing’ Finger, which is a chicken tender stuffed with mozzarella and marinara, topped with tomato aioli, parmesan and basil- it was incredible.  I also got their truffle fries which were full of flavor!  I highly recommend both!

NYC Hotspot: Pommes Frites

If you are looking for a unique food spot in NYC, here is your answer.  Pommes Frites serves Belgian style fries with a HUGE selection of dipping sauces!  At $4.50, the regular sized cone could feed a small army.  I tried the Sundried Tomato Mayo and the Rosemary Garlic Mayo, both were incredible!

NYC Hotspot: Momofuku Milk Bar

I had heard of Momofuku Milk Bar forever and finally got around to trying it…. and now I might be obsessed! I went for lunch and got the $7 meal deal which included a bagel bomb, drink (I chose Iced Coffee) and side (mine was the Compost Cookie), I also got Candy Bar Pie for later! If you go to the Upper West Side location, I suggest walking to Central Park to eat if it’s a nice dayt!

Bagel Bomb: An everything bagel filled with cream cheese and bacon; served hot it was delicious and pretty filling.

Iced Coffee: I consider myself a coffee snob, and was surprised by how good their iced coffee was!

Compost Cookie: It was okay

Candy Bar Pie: OMG!  One of the best things I’ve ever eaten!  An oreo crust, a layer of caramel, peanut butter and topped off with chocolate, this is a must eat in NYC!

NYC Hotspot: Peacefood Cafe

I’ve been researching all the “Must Eats” in NYC and stumbled across the Buzzfeed article: 39 New York City Foods That Deserve More Hype.  After seeing Peacefood Cafe’s Chickpea Fries, I had to try them!  With two different locations in NYC, Peacefood Cafe is all vegan, yet they have a pretty big selection to choose from. Their Chickpea Fries were incredible, definitely not something you could get anywhere else!  Their baked goods also looked amazing!  I’m already planning on going back to try something new!

BKR

I love reusable water bottles; I’ve never been a fan of buying plastic water bottles.  I stumbled across BKR on Instagram and fell in love with their colorful glass water bottles!  They’ve been featured in basically every major publication, and at $30 for a 500mL one, they make the perfect gift!
