Peanut Butter Breakfast Cookies


Since the school year has barely started, I had some time to bake the other day!  I found a recipe on Pinterest for PB2 Breakfast Cookies and decided to try it.  Here is the original recipe (from Watching What I Eat), but I tweaked it a little.  Word of warning: they do kind of have a banana flavor, so if you don’t like bananas, don’t try these!


  • 1/3 Cup PB2 Powdered Peanut Butter 
  • 1/3 Cup Water
  • 2 Bananas (mashed until creamy)
  • 2/3 Cup Unsweetened Applesauce
  • 1 tsp Vanilla Extract
  • 2 Tbsp Dark Cocoa Powder
  • Cinnamon (A few shakes) 
  • 2 Tbsp Coconut
  • 2 Cups Quick Oats (Uncooked)
  • 2 Tbsp Dark Chocolate Chips 


  • Preheat oven to 350 degrees
  • Mix PB2 powdered peanut butter (I used half regular and half chocolate) and water. Set aside
  • Combine mashed bananas, applesauce, vanilla, cinnamon and cocoa powder.  Stir throughouly and add the PB2 mixture.  Stir in the remaining ingredients (Oats, Coconut, Dark Chocolate Chips) 
  • Drop cookies onto greased tray (I greased mine with Coconut Oil) and flatten into round cookies (My recipe made 15 cookies)
  • Bake 15-20 minutes
  • Let cool and keep in covered container
